The Story

Our scallops are hand-dived from the pristine waters off the Scottish coast, harvested by divers who select only the most perfect specimens at their peak. The ember-searing technique caramelizes the surface while preserving the delicate sweetness within.

The cauliflower silk is prepared over two hours, blending butter and cream into a velveteen texture that mirrors the scallop's richness. Chorizo crumble adds a whisper of smoke and spice, while burnt apple gel brings a bright acidity that ties the plate together.
