The Story
Inspired by the rolling hills of the northern highlands, this signature dish represents a journey through the seasons. Each rack is sustainably sourced from heritage breeds, aged for precisely 21 days to achieve a tenderness that dissolves upon contact.
The preparation is a ritual of patience. We hand-pick wild rosemary and thyme from our kitchen garden, blending them with smoked sea salt and toasted brioche crumbs to create a crust that locks in the natural juices during a slow, controlled roast over applewood embers.
