The Story
This dessert is an ode to restraint. The panna cotta is barely set — it trembles on the plate — infused with Spanish saffron and wildflower honey from a beekeeper who supplies us exclusively.
Compressed pear brings clean acidity and a jewel-like quality when sliced. Toasted Sicilian pistachios provide the necessary texture, their earthy richness a counterpoint to the delicate, floral creaminess of the panna cotta.
